Millionaire's Shortbread

Ingredients

  • Shortbread: 225g flour, 175g butter, 75g sugar
  • Caramel: 1 can condensed milk, 150g butter, 150g brown sugar
  • Topping: 200g milk or dark chocolate

Instructions

    Preheat oven to 180°C (350°F). Rub butter into flour and sugar for shortbread.

    Press into tin. Bake 20 mins until golden. Cool.

    Heat caramel ingredients in a pan gently until sugar dissolves.

    Boil vigorously for 5 mins, stirring constantly, until thick and fudge-colored.

    Pour over shortbread. Chill.

    Melt chocolate and spread over set caramel.

    Chill until hard. Slice with a hot knife.
